Canned vs. dried beans: which is easier on a bloated stomach?
The gentler bean is often the one that spent time in water you throw away. Canning, soaking, cooking, draining, and portion size can all change how much fermentable carbohydrate reaches the plate.

The shortcut can be the gentler preparation
You soak dried beans overnight, cook them from scratch, and still feel more swollen than you did after last week's canned chickpeas. The homemade batch seems like it should be easier: fewer ingredients, no industrial processing, complete control. But the can has one advantage your recipe may have thrown away. The beans sat in liquid for a long time, and then you poured that liquid down the drain.
For bean-related gas, water is an extraction step. The useful comparison is not processed versus natural. It is how long the beans contacted water, whether that water was discarded, which bean you chose, and how much landed in the bowl.
Your enzymes stop where the bean sugars begin
Beans contain raffinose-family carbohydrates, including raffinose, stachyose, and related galacto-oligosaccharides. Human small intestines do not make enough alpha-galactosidase to split all of them. The intact carbohydrates continue into the colon, where bacteria can break them down. Gas is one product of that fermentation.
These carbohydrates dissolve in water. During soaking, cooking, and canning, some move out of the bean and into the surrounding liquid. Discarding the liquid removes part of that extracted load. Blending the cooking liquid back into soup sends it back to the plate.
That does not make beans unhealthy or prove they should be avoided. Their fiber and protein are useful, and fermentation varies from person to person. It explains why preparation and portion can change the same bean from manageable to loud.
What soaking studies can tell us, and what they cannot
A domestic-preparation study of common beans found that soaking and discarding the residual water before cooking reduced measured raffinose by 25%, stachyose by about 25%, and verbascose by about 42%. Other laboratory work in chickpeas, kidney beans, and lentils also found sizable decreases after soaking and cooking, although the amount differed by legume and method.
Those are chemistry measurements, not a promise about symptoms. A 25% reduction can matter to someone near a personal threshold and do little for someone eating a very large serving. Canned beans also vary by variety, processing, and how much liquid remains after draining.
The practical conclusion is modest: canned is not automatically rougher, and dried is not automatically gentler. Both can use water to lower some oligosaccharides. The liquid you keep is part of the dose.

The red-kidney-bean rule is about safety, not bloating
Raw or undercooked kidney beans contain high levels of the lectin phytohaemagglutinin, which can cause severe nausea, vomiting, and diarrhea. FDA advises soaking dried kidney beans for at least five hours and then boiling them in fresh water for at least 30 minutes. A slow cooker may not get hot enough on its own to destroy the toxin.
Canned kidney beans are already properly cooked. If convenience helps you use a safe, consistent preparation, that is a real advantage. Digestive experimentation never overrides cooking instructions.
Use portion before you ban the whole category
Start with one bean, one preparation, and one modest serving in an otherwise familiar meal. Drained canned lentils versus a large bowl of dried-bean chili is not a fair comparison: the beans, quantity, cooking liquid, onion, garlic, and meal size all changed.
